Scotch Eggs

The Ingredients:

  • 1.5 lbs ground pork
  • 6 Tbsp. Paleo Powder Pecan + Flax + Pink Breadless Breading
  • 1/2 Tbsp. Dijon mustard
  • 1 Tbsp. sugar-free ketchuo
  • 1 egg white
  • 7 eggs

The Process:

  1. Bring a pot of water to boil. Once boiling, add the eggs and let them boil for 5-6 minutes. Remove the pot from the heat and allow them to sit in the water for an additional 5 minutes. Remove the eggs from the pot and allow them to cool. Once they are cool, carefully peel them.
  2. Preheat your oven to 400 degrees. In a bowl, mix the ground pork, Paleo Powder Pecan + Flax Breadless Breading, dijon mustard, egg white, and ketchup (optional). Divide the meat mixture into 7 balls. Flatten one of the balls of ground meat and place one of the peeled hard boiled eggs in the center. Wrap the ground meat up around the egg, making sure that the egg is completely covered by the ground meat. Repeat with the remaining eggs and ground meat.
  3. Place the eggs on a parchment covered sheet pan and bake for 25-30 minutes, or until they are golden. Slice in half and enjoy them as is, or drizzle with ketchup or sriracha sauce.
